The Secret to Perfect Shortbread: A Rice Flour Recipe with Tips & Tricks

Shortbread is one of baking's most beloved classics — buttery, crumbly, and melt-in-your-mouth delicious. But did you know that swapping a portion of all-purpose flour for rice flour takes shortbread to a whole new level? The result is an incredibly tender, delicate crumb that practically dissolves on your tongue.

Rice flour has a finer texture than all-purpose flour and contains no gluten-forming proteins, which means less structure and more crumble — exactly what you want in a shortbread. It's the secret ingredient used by many professional bakers for that signature melt-away texture.

Rice Flour Shortbread Recipe

Ingredients

  • 225g (1 cup) unsalted butter, softened
  • 100g (½ cup) icing sugar, sifted
  • 175g (1¼ cups) all-purpose flour
  • 75g (½ cup) rice flour
  • 1 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. Beat the softened butter and icing sugar together until pale and fluffy, about 3–4 minutes.
  3. Mix in the vanilla extract.
  4. Sift in the all-purpose flour, rice flour, and salt. Mix until just combined — don't overwork the dough.
  5. Turn the dough out onto a lightly floured surface and roll to about ½ inch thickness.
  6. Cut into shapes using your favourite cookie molds or cutters.
  7. Place on the prepared baking sheet and refrigerate for 15 minutes (this helps them hold their shape).
  8. Bake for 18–22 minutes until just barely golden at the edges.
  9. Cool completely on the pan before moving — they're delicate when warm!

Tips & Tricks for Perfect Shortbread

🧈 Use Quality Butter

Butter is the star of shortbread, so use the best you can find. European-style butter with higher fat content gives a richer flavour and better texture.

❄️ Keep Everything Cold

Chilling the dough before baking is non-negotiable. Cold dough holds its shape beautifully in the oven, especially important when using decorative molds.

🍪 Use Beautiful Molds for Stunning Results

Shortbread is the perfect canvas for intricate designs. Springerle molds press gorgeous patterns into the dough that stay crisp after baking. Try our Pomegranate Heart Mold for elegant heart-shaped shortbread, or the Oval Rose Mold for a classic floral design. For something whimsical, the Detailed Bunny Mold is always a crowd-pleaser!

📏 Roll Evenly

Uneven thickness means uneven baking. Use rolling pin guides or two wooden dowels of equal height on either side of your dough to ensure a consistent thickness every time.

🌡️ Low and Slow

Shortbread should never brown — bake at a lower temperature and watch carefully. You're looking for a very pale golden colour at the edges only.

✨ Press, Don't Cut

When using springerle molds, press firmly and evenly into the dough, then lift straight up. Dust the mold lightly with flour between pressings to prevent sticking. Our Sweetheart Flower Angel Heart Mold and Six Point Star Mold create stunning results with this technique.

🎁 Gift-Worthy Presentation

Shortbread makes a beautiful gift. Once cooled, stack cookies in a cellophane bag tied with ribbon, or layer them in a decorative tin with parchment between layers.

Make It Your Own

Once you've mastered the base recipe, try these variations:

  • Lemon Shortbread: Add 1 tbsp lemon zest to the dough
  • Lavender Shortbread: Add 1 tsp dried culinary lavender
  • Chocolate Dipped: Dip cooled cookies halfway in melted dark chocolate
  • Almond: Replace vanilla with almond extract and top with a sliced almond before baking
