This is a Dutch-Processed or Alkalized cocoa powder which means it has been treated with an alkali to neutralize its acidic nature. Because it is neutral and therefore will not react with baking soda, it “should” be used in recipes calling for baking powder; unless there are other acidic ingredients in sufficient quantities used; in order for proper leavening to occur.
Due to the differences between natural and Dutch-processed cocoa powders, it is not advisable to substitute one for the other in recipes as it may cause leavening issues.
